My Autumn obsession is in full force now that my favorite home decor stores are starting to put out merchandise. Can you believe it’s almost that spooky time of year again?! I am so excited and ready for everything! If we’re going to be honest though, I’ve been ready for Fall for a long LONG time now haha. At this moment, my home is already decorated…. so……. JUDGE ME. 

It’s also so much fun to see my favorite Halloween and Fall accounts on Instagram. I love seeing their posts on my feed with updates almost daily now with upcoming merchandise and events. Thank you guys for constantly inspiring me and celebrating this season year round! 

Aside from all the festivities, one of the things that I think makes Autumn so special are all the delicious staple flavors. I thought it’d be fun to make a simple recipe that will not only take your palette straight to harvest season, but is also delicious and nourishing for your body. This recipe is vegan, gluten free, refined sugar free, oil free, and has great sources of fiber, manganese, vitamin A, vitamin E, and copper. It will also leave your home filled with a plethora of scents that we can only describe as Fall. Let’s get started!

Fall Granola

  • Oven
  • Baking sheet

Ingredients
  

  • 1/2 cup Pumpkin puree
  • 3 tbsp Almond butter
  • 1 1/2 tsp Vanilla extract
  • 1/3 cup Maple syrup
  • 1/2 tsp Pumpkin spice blend
  • 2 cups Rolled oats
  • 1/3 cup Pecans, chopped
  • 1/4 cup Dried cranberries

Instructions
 

  • Preheat oven to 325 F.
  • Line baking sheet with parchment paper.
  • Mix together the pumpkin puree, almond butter, vanilla, maple syrup, and pumpkin spice blend.
  • Pour in the rolled oats, pecans, and cranberries. Fold in mixture and make sure everything is evenly coated.
  • Place the mixture onto the baking sheet and spread contents out into small clusters.
  • Bake at 325 F for 12 minutes.
  • Remove from the oven and stir the granola around. Bake it again at 325 F for another 14 minutes.
  • Remove from the oven and allow granola to cool for 15 minutes. Store in an airtight container until ready to serve.
